Emotional Support Cookies

Irresistible Chocolate Chip Cookies (a.k.a. Emotional Support Cookies)
These are the cookies you make when you swear you’re just baking for the kids, but somehow you’re standing in the kitchen at 10:47pm eating one straight off the pan like a raccoon with responsibilities.
Yes, there are oats — but they’re ground up so no one can accuse this of being “healthy.” They’re just here to give the cookies that bakery-style chew that makes people say, “Wait… what did you put in these?” while reaching for a third. The lemon juice? You don’t taste it. It just quietly does its job, like moms do.
Soft centers. Golden edges. Chocolate chips in every bite. Optional walnuts for the one family member who insists cookies should have “texture” (you’re brave, we respect you). These cookies will disappear faster than your patience on a Target run with kids.
Best enjoyed warm, preferably while hiding from everyone in the pantry whispering, “I deserve this.” 🍪💅

Ingredients
Method
- Preheat your oven to 350°F (175°C).
- Grind the rolled oats in a food processor or blender until fine.
- In a medium bowl, combine the ground oats with the flour, baking soda, salt, and cinnamon. Mix well and set aside.
- In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth and creamy.
- Add the vanilla extract, lemon juice, and eggs to the butter-sugar mixture. Mix until well combined.
- Gradually add the dry ingredient mixture to the wet ingredients, mixing until just combined.
- Fold in the chocolate chips and chopped walnuts (if using) until evenly distributed throughout the dough.
- Using a cookie scoop or spoon, drop rounded tablespoons of dough onto ungreased baking sheets, spacing them about 2 inches apart.
- Bake in preheated oven for 10-12 minutes, or until the edges are golden brown.
- Remove from oven and let cool on baking sheets for 2 minutes before transferring to wire racks to cool completely.
- Serve warm
